This is going to sound a little ridiculous, but these bars were a celebration. A celebration of something that I wish I could find a more eloquent way to say. They mark the momentous occasion of finding a source for reasonably priced, raw nuts. Yes, after nearly six months of searching, the quest has ended lucratively!
I know, I know… who gets this anxious about almonds? This crazy about cashews? This passionate about pistachios? Apparently, given the right circumstances, I do. See, where we’re living, even nuts still in the shell typically come covered in salt and msg. And they’re overpriced. And they’re usually sold in big bags full of tiny, single serving bags. I just want to buy a pound of plain almonds people, is that so much to ask? Fortunately, I have a friend who runs her own business here selling various nut butters. I asked her where a lowly consumer might find such goods and her knowledge did not disappoint!
She led me to a local wholesale foods market and her preferred vendor. Almonds, pine nuts, sunflower seeds, cashews, and on and on! The prices were phenomenal and the additives were absent! Huzzah!
Ok, enough of all that, I just needed you to know how much more exciting these bars were to us coming from such a season of want into a season of plenty. But I promise, if you like payday’s, you’ll be pretty excited about these too…
serves a few hungry kids and a frazzled mom with a few leftover
1 cup cashews
1 cup dried, pitted dates (loosely packed, probably really more like 2/3 cup)
2 tbsp natural peanut butter (measuring peanut butter is just plain nuts, just grab a heaping spoonful)
Dash of sea salt
Sprinkle of water
-pulse cashews in food processor a few times
-add dates and pulse until uniformly crumbled
-add peanut butter and salt, pulse again until incorporated
-add a tsp or two of water and run food processor until a ball forms
-smush ball into a pan of some sort, press it out to be as thick or thin as you’d like your bars to be
-refrigerate for a few hours to firm up
Seriously, we’ve made larabars at home a few times, but these were the first ones that made me exclaim out loud their deliciousness. It was a total fluke too, I was just trying to make them with more cashews and fewer dates. It occurred to me that a touch of peanut butter might help them hold together better. Oh what a serendipitous trial of ingredients in such perfect harmony. Try them, try them now! Don’t delay! Especially if you live in a country where you can buy raw cashews to your hearts content. A liberty I shall never again take lightly. 😉
